Banana Bread

Banana bread is honestly the best and this one is so delicious and cakey (if thats a word haha)! It's perfect fresh out of the oven and then also the next day toasted and topped with nut butter and cinnamon!!

Ingredients:
- 2 cups almond meal
- 3 tbsp coconut flour
- 3 eggs
- 2 large ripe bananas, mashed
- 2 tbsp coconut oil, melted
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Pinch of salt
- 1 tsp baking powder
- Optional: walnuts and pecans to top the loaf with

Instructions:
1. Pre heat your oven to 180 degrees celsius
2. In a large mixing bowl, mix together your dry ingredients (almond meal, coconut flour, cinnamon, salt and baking soda)
3. In a seperate bowl, mix together all of your wet ingredients (eggs, bananas, coconut oil, maple syrup and vanilla extract). Add this to your dry ingredients and mix until everything is evenly combined
4. Pour your mixture into a lined loaf tin and place in the oven for 30 minutes
5. Once cooked, allow it to sit in the tin for 5-10 minutes before transferring to a cooling wire. Keep stored in the fridge and pop it into the toaster or oven when you are having a slice! Enjoy!
