Apricot Choc Chip Oaty Slice

A recreation of my childhood fave apricot choc chip oaty slice! I ALWAYS had an oaty slice in my lunchbox at school and it was always my favourite so i thought why not re-create it - and i so happy i did because these are DELISH! Might not look exactly the same but it sure does taste the same! Hope you enjoy!

Ingredients:

  • 1 cup rolled oats

  • 1 cup roasted walnuts

  • 3/4 packed cups dried apricots

  • 1/4 cup almond butter

  • 2 tbsp coconut oil, melted

  • 1 tbsp maple syrup or sweetener of choice

  • 1 tsp vanilla extract

  • Pinch of salt

  • 80g dark chocolate, cut into chunks

Instructions:

  1. Begin by blending your oats and walnuts together until they turn into a powder.

  2. Add the rest of your ingredients into the blender (besides the chocolate) and blend until everything is combined and a dough forms. Pulse in the chocolate chunks at the end.

  3. Press this mixture into a lined dish, (about 2cm thick) and place in the fridge or freezer to set. Once set, cut into bars. Keep stored in an airtight container in the fridge and enjoy!
