Apple Pie Overnight Oats

Overnight Oats have been my go-to breakfast ever since i started at uni a couple of years ago! They are so easy to make, are delicious, are perfect for an on-the-go meal and even just to have prepared at home! This flavour combo is also SUPER yum - everything works together so well! The apple is super easy to make and keep stored in the fridge for a couple of days - perfect for meal prep! Hope you enjoy!

Ingredients:

  • 1/2 cup rolled oats

  • 1 tbsp chia seeds

  • 2/3 cup milk of choice (I used oat)

  • 1 tbsp yoghurt of choice (I used The Collective's Vanilla Bean Skyr yoghurt - a thick and creamy one will work best or else it may be too runny)

  • 1/2 tsp cinnamon

  • 1/4 tsp ginger powder

  • Optional: 1 tsp of sweetener

For the apple:

  • 1 apple

  • 1 tsp cinnamon

  • 1/2 tsp vanilla extract

  • Dash of maple syrup or sweetener of choice

  • 1-2 tbsp water

Instructions:

  1. In a jar, combine your rolled oats, chia seeds, cinnamon and ginger. Once combined, add in your mix and mix. Stir in your yoghurt at the end.

  2. Place this mixture into the fridge overnight

  3. When you are ready for the oats the next day, begin to prepare your apple. Begin bu chopping your apple into small chunks. Place the apple on a small pan with the water, sweetener, vanilla and cinnamon. Cook on a low heat until your apple soften down and become slightly golden.

    1. Serve hot with your overnight oats and choice of toppings. I used yoghurt, nut butter and extra cinnamon!
