Afghans

Afghans are one of my all time favourite cookies so i feel like i had to re-create them! And let me tell you, i am so glad i did!! These turned out so well and are very similar to the actual thing. You should definitely get amongst this - you won't regret it!


They are perfectly sweet with a nice biscuit texture and crunch from the cornflakes! They are also super easy to make and take less than 10 minutes to make up.



Ingredients:

- 3/4 cup almond meal

- 1/2 cup cacao powder

- 1/3 cup coconut sugar

- 1/3 cup coconut oil, melted

- 2 tbsp almond butter

- 1 tsp vanilla extract

- 1 heaped cup of cornflakes

- Melted chocolate to dollop on top

- 7 walnuts



Instructions:

1. Pre heat your oven to 180 degrees celsius

2. In a large mixing bowl, mix together your almond meal and cacao powder

3. In a seperate bowl mix together your melted coconut oil, coconut sugar, almond butter and vanilla extract. Add this to your dry ingredients and mix together well. Add in your cornflakes at the end.

4. Shape into cookies and place in the oven for around 15 minutes.

5. Once cooked and cooled, melt your chocolate. Dollop this on top of each cookie along with a walnut and enjoy!
